Raspberry, Pear and Walnut Loaf


  • 1.5 cups Creamy Rice
  • 1.5 cups almond meal
  • 1 tsp baking soda (bicarb)
  • 2 tsp baking powder
  • pinch of salt
  • 1 ripe banana
  • 2 tbsp flaxseed meal
  • 2 tsp apple cider vinegar
  • 1 cup warm water
  • 1/3 cup good quality sugar free maple syrup
  • 2 ripe pears
  • 1.5 cups frozen raspberries
  • 1/2 cup almond flakes
  • 1/2 cup chopped walnuts


  1. Peel and chop pears.
  2. Mix dry ingredients (Creamy Rice, almond meal, baking soda, baking powder, pinch of salt).
  3. In a seperate bowl mash banana and mix in flaxseed meal. Then add other wet ingredients (apple cider vinegar, maple syrup, water).
  4. Add wet ingredients to dry ingredients and mix well.
  5. Mix in chopped pears and chopped walnuts.
  6. Fold in frozen raspberries softly so they don’t soften too much.
  7. Grease loaf tin with coconut oil spray and put mixture into tin.
  8. Top with lots of almond flakes.
  9. Bake at 180 degrees for 1 hour, 20 minutes.
  10. Serve with coconut yoghurt, fresh raspberries, sunflower seeds and a drizzle of maple syrup!
