Raspberry, Pear and Walnut Loaf
INGREDIENTS
- 1.5 cups Creamy Rice
- 1.5 cups almond meal
- 1 tsp baking soda (bicarb)
- 2 tsp baking powder
- pinch of salt
- 1 ripe banana
- 2 tbsp flaxseed meal
- 2 tsp apple cider vinegar
- 1 cup warm water
- 1/3 cup good quality sugar free maple syrup
- 2 ripe pears
- 1.5 cups frozen raspberries
- 1/2 cup almond flakes
- 1/2 cup chopped walnuts
METHOD
- Peel and chop pears.
- Mix dry ingredients (Creamy Rice, almond meal, baking soda, baking powder, pinch of salt).
- In a seperate bowl mash banana and mix in flaxseed meal. Then add other wet ingredients (apple cider vinegar, maple syrup, water).
- Add wet ingredients to dry ingredients and mix well.
- Mix in chopped pears and chopped walnuts.
- Fold in frozen raspberries softly so they don’t soften too much.
- Grease loaf tin with coconut oil spray and put mixture into tin.
- Top with lots of almond flakes.
- Bake at 180 degrees for 1 hour, 20 minutes.
- Serve with coconut yoghurt, fresh raspberries, sunflower seeds and a drizzle of maple syrup!
